Mixed Vegetable Kootu

I make kootu with whole lot of veggies. But i have never made a mixed veg kootu, few days back i decided to make this and guess what it taste so yummy. Plus it is so healthy too..

Ingredients for Mixed Vegetable Kootu

  • Oil - 1 tsp
  • Onion - 1 medium size chopped
  • Tomato - 1 chopped
  • Potato - 1 peeled and cubed
  • Beans - 1 chopped
  • Carrot - 1 chopped
  • Salt to taste
  • Turmeric Powder / Manjal Podi - 1 tsp
  • Yellow Moong Dal / Pasi Paruppu - ½ cup
For Grinding:
  • Coconut - ½ cup grated
  • Cumin Seeds / Jeerakam - 1 tsp
  • Green Chillies - 3
For Seasoning:
  • Coconut Oil - 1 tbsp
  • Mustard Seeds / Kaduku - 1 tsp
  • Urad dal / Ulundu Paruppu - 1 tsp
  • Curry leaves - 1 sprig

How to make Mixed Vegetable Kootu

  1. Cook moong dal till it gets soft. Set aside.
  2. Grind ingredients given for grinding to a smooth paste. Set aside.
  3. In a pan, heat 1 tsp oil and add in onions, tomatoes and saute for couple of mins.
  4. Add in all veggies and salt. Mix well. Saute for 5 mins or so.
  5. Now add a splash of water and cover with a lid. Simmer the pan and cook on low
  6. heat for 10 to 15 mins till veggies are cooked.
  7. Now add in cooked dal, coconut masala, turmeric powder and mix well.
    Simmer for 5 mins or so.
  8. Now make seasoning by heating oil and crackling mustard, urad dal and curry leaves.
  9. Pour this into the curry and mix well.
  10. Serve.

Ingredients

  • 1 tsp Oil
  • 1 medium size chopped Onion

  • 1 chopped Beans
  • 1 chopped Carrot
  • Salt to taste
  • 1 tsp Turmeric Powder / Manjal Podi
